Xanthan gum has been widely accepted by the food industry, because it can provide excellent storage stability and processing at low concentrations.
Xanthan gum is also known as yellow gum, xanthan gum, Xanthomonas polysaccharide,it is a false Xanthomonas by the fermentation of a single spore polysaccharide from cabbage black rot disease Xanthomonas campestris with carbohydrates as the main raw material.
In cosmetics, xanthan gum is used to prepare water gels, usually in conjunction with bentonite clays. It is also used in oil-in-water emulsions to help stabilise the oil droplets against coalescence. It has some skin hydrating properties.
